Nowadays, the cooking oils we commonly use include olive oil, canola oil, sunflower oil, and corn oil. Mustard oil is also used for frying. However, most of the oils available in the market are refined oils.

These refined oils appear visually appealing and contain added vitamins. These vitamins are artificially incorporated because the high temperatures used during extraction burn away the natural nutrients in the oil. To enhance the oil’s color and clarity, caustic soda is used, and additional vitamins are added to improve its nutritional value. After undergoing multiple chemical processes, the oil is made suitable for consumption, which is why it is called refined oil.

According to international standards, any oil extracted at a temperature below 49°C (120°F) is considered cold-pressed. In the past, oils were extracted using traditional wooden mills (kohlu), which naturally followed the cold-pressing method. Over time, advanced machines replaced traditional mills, increasing the speed and quantity of oil extraction but compromising its nutritional value.

Although cold-pressed extraction takes longer and yields less oil, it retains all natural nutrients and offers maximum health benefits.
